Pumpkin Spice Mummy Cheezecake Popsicles

Remove cheezecake from the freezer and allow it to thaw for roughly 20 minutes. Slice the cheezecake into 6 equal slices.
Place chocolate and coconut oil in a double boiler (a heatproof bowl over a pot of gently boiling water). Stir often with a silicone spatula until chocolate is smooth and melted, about 7 minutes. Remove from heat and set aside.
Line a baking tray with parchment paper and set it aside.
Stick a popsicle stick in each cheezecake slice, and dip each slice in the melted chocolate, rotating to coat fully. Place each dipped slice on the lined baking tray and freeze for 10 minutes.
Once the chocolate is hardened, decorate by drizzling more chocolate and Place two candy eyeball sprinkles on each cheezecake pop, place back in the freezer for 10 more minutes and enjoy!
